THIS WEEK’S MEAL PREP

Hey! Every week I try new recipes for my weekly meal prep and prep them in these green bento boxes HERE.

If I end up loving the recipes I will share them with you! If not, I will force Steven to eat them until the next week when I start fresh. muahah I have a mix of healthy and..not as healthy options. When cooking for a husband, it is hard to keep everything healthy so many times we will eat different things. That is why I love these boxes, because you can still eat together and just have different items in each box!

Recipe #1

Taco Pop Tarts

What you will need:

+2 boxes refrigerated pie crusts (total of 4 pie crusts), at room temperature
+1 tablespoon olive oil
+1/2 onion, thinly sliced
+1/2 pound ground beef
+1 tablespoon taco seasoning
+1 cup frozen corn, thawed
+1 cup canned black beans, drained
+1 cup shredded cheddar
+1 egg, beaten with 1 tablespoon water
+Sesame seeds for sprinkling

This is definitely a heavier meal so I made these for Steven. I smelled these and gained 10 pounds so I steered clear. hahahhh kidding, they are delish but def not on the whole 30 đŸ˜‰

 

Recipe #2

Turkey and Sweet Potato Skillet (healthy)

What you will need

+2 tbsp extra-virgin olive oil
+1 lbs extra-lean ground turkey
+1 tsp garlic clove, minced
+½ cup onions, diced
+½ cup yellow pepper, diced Coupons
+1 ½ cup sweet potato, diced
+Salt and pepper
+A pinch of red chili flakes
+½ cup shredded mozzarella cheese
+Fresh parsley for garnishing

Recipe #3

Copycat Zupas Chicken Enchilada Chili

What you’ll need:

+2 chicken breasts
+2 cups red enchilada sauce
+1 cup green enchilada sauce
+1 family size (23 oz.) can cream of chicken soup
+1 cup milk
+1 can Rotel tomatoes with green chilies
+2 Tbsp. chili powder
+1 tsp. paprika
+1 tsp. salt
+1 can black beans, drained and rinsed
+1 can corn, drained
+1 c. shredded cheddar cheese
+1/2 c. sour cream

Toppings:
crunchy tortilla strips
shredded cheddar cheese
sour cream
